Tasting Note by Nick Bulleid MW
Background

After years of languishing in relative obscurity, Rosé has re-emerged as a widely popular wine that merits serious attention from winemakers. This wine follows our highly successful 2006 vintage and, as before, was made from Cabernet sauvignon grapes from Mudgee, in the Central Ranges of New South Wales.

This wine was made, like all the best rosés, entirely by skin contact – and not by blending white and red - with the juice held in contact with the skins after crushing to extract the desired amount of colour and increase flavour. The juice was then fermented cool, like a white wine, to retain the fresh flavours.

Rosé is the most flexible wine of all. Served cold, it’s a perfect refresher by itself. It can also match a variety of foods, from salads and stir-fries through to barbecued seafood and meats. Enjoy it through 2008, while its fresh flavours are at their best.
