Background

After a cool, wet 2006 growing season in Western Australia, 2007 turned the tables with warm conditions and a very early vintage. The Margaret River grapes for this wine were grown on a single vineyard at Karridale, in the south of the region which is distinctly cooler than the northern part. They were hand-harvested on 10th and 11th March.

After chilling overnight, half the fruit was whole-bunch pressed and the balance crushed. After pressing, the juice was cold-settled for seven days and then fermented, 10% in new Hungarian oak barrels and the balance in stainless steel. The oak-fermented portion remained on its yeast lees for several months, gaining texture and complexity. A little less than half of this underwent a malolactic fermentation, bringing softness and buttery flavours. A small proportion of Viognier has added a barely detectable additional fragrance to the wine.

This is a modern style of Chardonnay, with the fresh, honeydew melon fruit complemented by the subtle oak complexity rather than being submerged or broadened. This style of Chardonnay is very versatile – fresh enough to enjoy by itself, yet with the flavour to match many foods, such as rich seafood dishes and white meats. It will gain further richness in bottle until 2010.

Fresh, yet full aroma of honeydew melon and cashew with subtle spicy, nuttiness from new oak.

Structure / Palate
Medium to full body, with lively, attractive fruit flavours. Excellent softness and balance, finishing dry, with mild acidity.
