Sparkling wines around the world are made from almost any grape varieties, white or red.
We believe, however, that the classic varieties of Champagne – Chardonnay and Pinot Noir - give the greatest combination of delicacy and complexity with a seamless balance.

This wine combines 64% Chardonnay and 36% Pinot noir from several vintages, a small quantity of older base wines being used to give complexity. Non-vintage blending is chosen to overcome vintage variation and give a more consistent style.
All of the base wines underwent a malolactic fermentation, to promote texture, softness and additional complexity. The blended base wine was entirely bottle-fermented – rare for a competitively priced wine - and then matured on its yeast lees, gaining attractive, bready flavours.

The result is a multi-purpose, "everyday" sparkling wine, with lightly complex flavours and a dry, yet soft finish. Drink each of your purchases of these NV wines within a year, while they are still fresh.

Nose
Fresh fruit, showing apple and lemon characters– predominantly from the Chardonnay – and hints of fruit salad. Light bread-dough overtones add complexity.

Structure / Palate
Delicate and fresh, with youthful fruit flavours and bottle-ferment/lees complexity. A creamy mid-palate, with well-married Chardonnay and Pinot fruit and a dry finish with balanced acidity.
