Selected from within our 480 parcels of vines which make up the 160 acres (70 ha) of our Mailly Champagne estate.
Hand picked crop, pressing of the full bunch. Alcoholic fermentation at 16°. Malolactic fermentation in thermo regulated inox stainless steel vats. Ageing on laths in traditional chalk caves.

A blend of 75% Pinot noir and 25% Chardonnay. Pale straw-yellow colour. The nose is very intense, with rich fruit character and Pinot noir predominating. It is complex with overtones of bread dough. Some charcuterie-like complexity from age on yeast lees. The palate has good weight and depth of flavour, with ripe flavours and very good balance. A trace of herbaceousness. Wonderful length of flavour. Like the Millesimé, this is a richly flavoured Champagne which gains its depth from high quality Grand Cru vineyard. All Champagnes are fully ready for drinking when released for sale. That said, the Champagne Mailly Brut Reserve will become softer and fuller in flavour with one or two years cellaring, developing richer, toasty flavour and greater complexity.
