Background

Sparkling wines around the world are made from almost any grape varieties, white or red. We believe, however, that the classic varieties of Champagne – Chardonnay and Pinot noir—give the greatest combination of delicacy and complexity with a seamless balance.

Our latest find in this style combines 56% Chardonnay and 41% Pinot noir from the 2008 vintage with a small quantity of older base wines to give complexity. Non-vintage blending is chosen to overcome vintage variation and give a more consistent style. The grapes were grown in the Victorian regions of King Valley and Ovens Valley. Some of the wine underwent a malolactic fermentation, to promote texture, softness and additional complexity. The blended base wine was entirely bottle-fermented—rare for a competitively priced wine—and then spent eighteen months maturing on its yeast lees, gaining attractive, bready flavours.

The result is a multi-purpose, “everyday” sparkling wine, with lightly complex flavours and a dry, yet soft finish. Drink each of your purchases of these NV wines within a year, while they are still fresh.

Tasting Notes

Colour
Bright, pale lemon yellow.

Nose
Fresh fruit showing hints of apple and lemon—predominantly from the Chardonnay. Honey from development and light bread-dough overtones add complexity.

Structure / Palate
Delicate and fresh, with youthful fruit flavours and bottle-ferment/lees complexity. A creamy mid-palate, with well-married Chardonnay and Pinot fruit and a crisp, dry finish.
