BackgroundThe grapes for this beautiful rosé came from a single vineyard in the cool hills at Clarendon above McLaren Vale. Once hand harvested, the grapes were destemmed, the whole berries pressed and the juice fermented cool at 12-14°C – all aimed at preserving freshness and delicacy. The wine was bottled after six months’ contact with the yeast lees to build the soft texture.
